Welp. Healthy January didn't work out this year 🤣. Barely made it to the last week of the month! Honestly, I'm not even sorry because did you see that stack of golden, fluffy deliciousness?? Allow me to introduce a recipe specifically requested by my husband, lemon raspberry buttermilk waffles.

Light, fluffy, and golden delicious, these waffles are packed with fresh raspberries, zingy lemon zest, and just enough buttermilk to keep them from getting too sweet. That's what powdered sugar and maple syrup is for!

A quick perfectly fluffy waffle hint: In my previous waffle recipes, I have shared that the secret to a perfectly light and fluffy interior...is egg whites. Aaaaand I still stand by it.

When it comes to pancakes, I prefer those a little denser so I generally just use two eggs. However, waffles are another story. In order to get a waffle to rise high enough to really make those little butter and syrup catching squares worth it, egg whites is the way to go (IMO).

Lemon Raspberry Buttermilk Waffles

Description

Fluffy, golden waffles packed with fresh raspberries and a little lemon zing. Perfect for Sunday brunch!


Ingredients

Units
  • 2 cups unbleached all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoons baking soda
  • 3 tablespoons granulated sugar
  • ½ teaspoon coarse salt
  • 1 tablespoon lemon zest
  • 2 cups buttermilk
  • ⅓ cup unsalted butter, softened
  • 1 egg yolk
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh raspberries
  • Powdered sugar, for dusting


Instructions

  1. Preheat a waffle iron. Prepare with cooking spray.
  2. In a large mixing bowl, combine flour, baking powder, baking soda, salt, and lemon zest together.
  3. In a small mixing bowl, whisk together egg yolk, buttermilk, vanilla extract, and softened butter together, until completely mixed.
  4. Pour the liquid mixture into the flour mixture, and stir until just combined.
  5. In a medium mixing bowl, whisk egg whites until they form stiff peaks. Gently fold into waffle mixture until just combined.
  6. Gently fold in fresh raspberries until just combined.
  7. Add about ¼ to ⅓ cup to each section of your waffle maker. Bake in the waffle maker according to manufacture’s instructions (should take about 4-5 minutes to come out nice and browned.) Keep warm until ready to serve.
  8. Dust with powdered sugar and serve with a pat of butter and/or your favorite syrup!
